Villa del Cigliano: “Wines tasting (and a great recipe) at the Villa”
The delights of the vine and the table for a pleasant day of work in Tuscany
We are at Villa del Cigliano in San Casciano Val di Pesa, Anna Maccaferri, who owns the Villa and lives here, welcomes us in her beautiful kitchen where we are going to enjoy tasting Villa del Cigliano wines over a beautiful lunch she had prepared for us.
The table has been laid today in this space that once was the service kitchen of the villa. The chimney,in perfect conditions, still retains the old tools for the fire. The room was restored in 1990 keeping it as close as possible to the old layout and style.
The room is heated with this beautiful, original “terracotta” wood stove, we are told that it takes a lot of wood logs but still does a great job!
We tasted Villa del Cigliano Chianti Classico over a great pasta dish. A “pasta cake” very simple and tasty at the same time, served with a freshly made tomato sauce to put on top to your taste.
Here is the recipe for 6 people:
Spread some butter on a baking dish (mine is pyrex) with a hole in the middle and cover it with a little ‘bread crumbs.
Boil some fresh pasta (about 1,5 kg) (io adopro le Rasagnole Buitoni : un pacco e mezzo. Drain it and mix with 500 ml of cooking cream, one and a half mozzarella’s confections and a lot of grated Parmesan cheese. Then put oll of it in the baking dish, put some more bread crumbs and some butter too. Put it in the oven for about an hour, untill it looks crisp and coloured,. Serve it with a simple tomato sauce.
Here is how it looks like in the late with the tomato sauce on top.
Food was delicious and perfectly paired with a great Chianti Classico. Gambero Rosso 2014 Guide “Vini d’Italia” made a great review of Cigliano Chianti Classico DOCG 2010 assigning it “2 Bicchieri Rossi” (Two Red Glasses score) so let’s go for the third “top score” glass next year!
