Harvest is late this year at Villa del Cigliano!
Every day we go out in the vineyard equipped with the necessary technology, but also relying on our palate and experience, to understand if it’s the right time to start harvesting.
The grape that is most “difficult to interpret” when it comes to harvest time, is Sangiovese: we measure the sugar and it would seem like ready to harvest but then tannins are still green and unbalanced.
That is where producer, agronomist and winemaker must have their specific “vision” and know exactly what kind of wine they want to produce and when, with that view, in what looks an unstable equilibrium of many parameters, it is time to harvest. This is art too! This is winemaking art!
