Vetrere: “Tiella from Puglia: rice, potatoes, mussels & Taranta wine”
We would like to share with you this traditional recipe from Puglia. It is easy and quick to prepare, and very tasty. We absolutely suggest that you enjoy it with a nice glass of “Taranta”, IGT Salento Rosé from Vetrere winery.
Ingredients for 4 people:
- 1.1 lb of rice (preferably Carnaroli or Arborio types)
- 4.5 lb. of mussels w/shells
- 1.1 lb of potatoes
- red tomatoes 6 medium / large and very ripe
- 2 cloves of garlic
- 2 large onions large
- Pecorino Romano cheese about 3 oz.
- Extra Virgin Olive Oil 10 full table spoons
- black pepper t.y.t.
- parsley t.y.t.
Use a ceramic or metal baking pan. Grease it lightly and begin to put layers of sliced onions, chopped tomatoes, sliced potatoes, uncooked rice (which you will first soak in water and drain!), The mussels that you will have cleaned and left with only one of the two shells (as you see above ) make sure you sprinkle the mussels with chopped parsley and garlic. Once you have completed the layers spray it with Extra Virgin Olive Oil and sprinkle with Pecorino Romano. Preheat the oven bringing it to 390° F and bake for about 45 minutes. An easy way to make sure that the dish is perfectly cooked is to try and taste the potatoes!
