La Dama: “Brasato with La Dama Amarone by Miriam”
A day in Valpollicella tasting over a great lunch
Miriam Dal Canale, Gabriele’s wife and a great partner in the cellar, delighted us with a traditional recipe from her family: a beautiful “Brasato with Amarone”. A dish that perfectly matches with the taste of La Dama’s Amarone della Valpolicella Classico DOC La Dama or with their Valpolicella Classico Superiore “Ca’Besi” DOC. Here’s the complete recipe:
Brasato with Amarone by Miriam (serves 4 people)
- 1 piece of beef meat (a cut of beef blade about 700-800 grams)
- 2 medium sized onions
- 1 stalk of celery
- 1 carrot
- 1 bottle of Amarone della Valpolicella classico doc “La Dama”
- Extra virgin olive oil, salt and pepper to your taste
Coarsely cut the onion and put it in a pot (a rather deep one) with EVOO . Cut the carrot and celery and add to the onion. Saute the onion and the vegetables, add the meat and let it brown on all sides . Add the entire quantity of Amarone covering the meat with the wine . Let the meat cook in wine very, very slowly and for long time, this is the secret of a great brasato. In the meanwhile add salt and pepper . After a few hours , when the liquid is thickening , turn off the heat and let it cool down, once cool it will be easier to slice . In the meantime put the sauce (and what remains of the cooked vegetables) that you have obtained into mixer, you should obtain a fairly liquid cream . Cut the meat into thin slices and lay them in the cream , put the pot on the fire again and continue to cook slowly, slowly adjusting the salt and pepper according to taste. The meat should be very soft and the sauce thick, the color will be dark thanks to Amarone, the flavor will be intense and inebriating.
